75% Pinot Noir, 10% Chardonnay, 10% Meunier, and 5% Blanc Vrai
A golden grey color, very fine, persistent bubbles. Elderberry and violet notes. The limestone minerality is softened by the pinot pulp. A harmonious balance between the discreet dosage and the lovely bitter flavors.
94pts Robert Parker's Wine Advocate "Offering up aromas of crisp golden orchard fruit, white flowers and stone fruit mingled with hints of clear honey and green almonds, it's medium to full-bodied, fleshy and vinous, with fine depth at the core, tangy acids and a lively pinpoint mousse. Concluding with a chalky finish, this is well worth seeking out."
Champagne Drappier is neither a Grande Marque nor strictly a grower, they have 60 hectares of vineyards in the Aube, the southern area of Champagne around its winery in the village of Urville. It also buys in two thirds of its supply from vineyard owners in the appellation to craft around 1.8 million bottles annually. Drappier's focus is on sustainability and is Champagne’s first carbon-neutral producer, with an increasing number of its vineyards certified organic, currently 15 ha are certified organic.
A newly released Cuvee by Drappier is a tribute to the Abbey of Clairvaux, built in 1152. The plot has been cultivated organically and horses are used to plough the vineyard, the soils are Jurassic Kimmeridgian limestone dominant. The champagne remains unfiltered and is only from the 1st pressing of the grapes.
